## Summary

This PR fixes <https://github.com/flyteorg/flyte/issues/6815|#6815>

Refactor to define all mockery configuration in `.mockery.yaml` instead of using `//go:generate mockery` comments in individual files.

## Changes

• Updated `.mockery.yaml` with all mock configurations
• Removed `//go:generate mockery` comments from interface files
• Regenerated mock files using the centralized configuration
